This vibrant, effervescent cocktail makes a celebratory sip for a brunch or party. It's a low-ABV libation that's special enough for a toast—and so delicious, that everyone will want the recipe. Another reason why it's so perfect for entertaining? It's a pitcher drink, so you won't have to shake each drink separately; instead, you mix one batch and serve all your guests.
Fresh raspberries (that you purée) give the drink it's beautiful hue. The purée is mixed with pineapple juice, seltzer, and a brut sparkling wine. The resulting drink is a luscious hybrid of the Bellini, made with peach nectar or purée and prosecco, and the French martini, a sweet cocktail made with the raspberry liqueur Chambord, pineapple juice, and vodka.

Blend raspberries and juice:
Blend raspberries, pineapple juice, and vanilla until smooth.

Strain and pour into pitcher:
Strain through a fine-mesh sieve, pressing on solids; pour into a pitcher. Top with wine.

Let foam settle; top with seltzer and stir gently to combine. Put a few raspberries in each glass, pour, and serve.
