One sip of this icy blender drink transports you to the islands. We always skip the bottled mix and go old school, making a pina colada with cream of coconut, fresh pineapple, and rum just like they did in San Juan, Puerto Rico in the 1950s when the cocktail was created—though back then they might have shaken rather than blended this summertime classic. Our recipe is a one-step drink; just blend the ingredients and enjoy, but don't skip the pineapple wedges and leaves for garnishing.

Directions

  1. Combine all ingredients in a blender. Blend until smooth. Divide among chilled glasses, garnish with pineapple wedges and leaves, and serve immediately.

Cook's Notes

To make ahead, blend the pineapple with rum and cream of coconut and store in the refrigerator up to 1 day. Add ice and blend again just before serving.
