Skirt steak is one of our favorite cuts—quick-cooking and full of beefy flavor. It's also easy on the budget compared to other steaks. It's from the short plate of a cow, a forequarter cut from the belly, and is naturally very thin (hence the speedy cooking). There are only two skirt steaks per cow, which might explain why you don’t see this cut very often at the grocery store.

Skirt steak pairs well with spicy flavors, bold herbs, and zesty marinades, which help tenderize its connective tissue. We love it grilled, pan-seared, stir-fried, and even cooked in a stew. And once you try our skirt steak recipes, we think you'll be a skirt steak fan, too.

We call this a stir fry, but you might not agree. The meat is broiled, not cooked in a wok or skillet. It's tossed with a sauce of oyster sauce, soy sauce, sesame oil, garlic, and ginger before broiling for a punch of flavor.

Described as a "one-pot weekend wonder" recipe, this tasty meal comes together faster than ordering takeout. The short ingredient list gets its flavor from ginger, Thai chiles, and scallions. Serve with jasmine rice and peanuts.

It's tempting to dig right in, but letting your skirt steak rest for 5 to 10 minutes after cooking makes a big difference. Tent it loosely with foil and give it time to sit. This short pause allows the juices to redistribute evenly throughout the meat.
