Former royal chef Darren McGrady recently revealed that the late Princess of Wales was a big fan of overnight oats, which have become wildly popular in recent years. But Diana was already eating them back in the '90s. He shared the recipe for the breakfast staple in a video posted on YouTube titled "Princess Diana's Overnight Oats." McGrady worked for the British royal household from 1982 to 1997, starting with Queen Elizabeth and Prince Philip at Buckingham Palace before becoming Princess Diana's private chef at Kensington Palace in 1993. He is also the author of Eating Royally: Recipes and Remembrances from a Palace Kitchen Cookbook. "When I became Princess Diana's chef, she got her life back on track. She was a patron of 119 different charities, she was working out at the gym three days a week, and just looking the best she ever did," McGrady says in the video. Her love of the breakfast item began after she visited a Swiss health clinic, where the dish was known as bircher muesli, the chef explains. "She thought they were really, really good and all the ingredients were super healthy. She stole the recipe, came back and said, 'Darren, I want these for breakfast every day,'" he shares. To prepare the overnight oats, McGrady starts by steeping the rolled oats in freshly squeezed orange juice overnight in the fridge. In the morning, he folds in Greek yogurt, raw honey to taste, and lemon juice into the oat mixture before adding in grated Honeycrisp apple, blueberries, and walnuts.
