It's made with common ingredients you probably already have on hand—butter, egg, salt, and a gluten-free flour blend—so it's straightforward to make. No need to buy several different alternative flours or potato starch and tapioca starch and xanthan gum. Simply use your favorite one-for-one gluten-free flour blend and you'll find this pie crust is as easy to make as...pie.

What’s So Special About a Gluten-Free Pie Crust?

Making a pie crust recipe written for regular all-purpose flour but using gluten-free flour is not the best way to make gluten-free pastry. Wheat-based crusts contain gluten, so they act differently and require different ratios of liquid than gluten-free doughs. While our recipe uses regular pastry crust ingredients and gluten-free flour, we add an egg to help keep the gluten-free dough pliable.

You can make this gluten-free pie crust ahead of time. To store, refrigerate, wrapped tightly in plastic, up to three days.

Directions

  1. Pulse flour and salt

    In a food processor, pulse flour and salt until combined.

  2. Add butter:

    Add butter and pulse until mixture resembles fine meal, with no large pieces of butter remaining.

  3. Add egg and water:

    Add egg and 2 tablespoons ice water, then pulse until well combined and dough holds together when squeezed, 1 minute. If necessary, add up to 2 tablespoons more ice water, 1 tablespoon at a time.
