When you need an easy appetizer for entertaining, turn to our marinated mozzarella recipe. It takes 5 minutes to make, then marinates for at least 20 minutes in the refrigerator—while you finish prepping the rest of the meal. It’s one of those impressive dishes that no one will guess was so simple to put together. Use a pound of fresh mozzarella or bocconcini (little mozzarella balls). The cheese marinates in a delicious mixture of good olive oil, fresh herbs (oregano, rosemary, thyme), and red pepper flakes. It’s magical how the flavored oil takes the mozzarella from plain and creamy to irresistibly complex in so little time. Serve it as part of an antipasto platter with olives, crackers or bread, and cured meats—and watch how fast it goes.

Directions

  1. Mix oil, herbs, and pepper flakes; marinate mozzarella:

Combine oil, herbs, red-pepper flakes, salt, and pepper in a small bowl. Drizzle over mozzarella. Let stand for at least 20 minutes (or up to 1 hour).

  2. Serve:

Serve with olives, crackers, bread, and cured meats.

Variation

You can substitute whole bocconcini (tiny balls of fresh mozzarella) for the sliced mozzarella.
