When you want an easy apple dessert, turn to this gluten-free apple crisp. Fruit crisps are simple to make, even when you swap the usual flour or flour and oats topping for all oats, as we do here. We grind half the oats to make flour for the topping and leave the rest as rolled oats for texture. The filling is a delicious mix of sweet apples such as Braeburn or Gala, so we only add a little brown sugar, cinnamon, and some dried cherries. It's quick to put together, takes an hour to bake, and the hardest part of making this dessert is waiting for it to cool so you can scoop portions to serve.

Directions

  1. Preheat oven and grind 1/2 cup oats:

    Preheat oven to 375°F. Pulse 1/2 cup oats in a food processor until coarsely ground.

  2. Make topping:

    Transfer ground oats to a bowl and add remaining 1/2 cup oats, brown sugar, salt, and butter. Stir until combined.

  3. Make filling and assemble crisp:

    In a large bowl, toss together apples, brown sugar, dried cherries, and cinnamon. Transfer to a 9-inch-square baking dish. Sprinkle with topping.

  4. Bake:

    Cover with parchment-lined foil and bake 30 minutes. Remove foil and continue baking until apples are tender and topping is golden brown, about 30 minutes more. Let cool slightly before serving
