There's a lot to love about this vegetable-packed lasagna. Strips of blanched zucchini stand in for some of the noodles, lightening up the dish. We add frozen spinach to the ricotta layer, and you can use good-quality store-bought or your favorite homemade marinara sauce along with no-boil noodles.
