These easy coconut macaroon trees are a charming Christmas cookie—and very easy to make. They're made entirely by hand; no mixer needed, just one bowl. The ingredients are stirred together, formed into cute little pyramids, like mini evergreen trees, then baked. A dusting of confectioners’ sugar stands in for snow.
These treats are gluten-free, dairy-free (no butter here), and don't contain any leavener—they do contain egg whites, and are packed with shredded coconut and sugar. Enlist your little elves to help you make them, then place your macaroon forest on a plate—and watch it disappear fast.

Preheat oven; combine ingredients:
Preheat oven to 350°F. Thoroughly combine coconut, granulated sugar, egg whites, vanilla, and salt in a large bowl using your hands or a wooden spoon.

Form cookie trees:
Form 2 tablespoons of the mixture at a time into 2-inch-tall trees with your hands, using your fingertips to make pointed tops. Transfer each tree to a parchment-lined baking sheet, spacing them 1 inch apart.

Bake until edges are golden and trees are firm, 12 to 14 minutes. Let cool on baking sheet on a wire rack at least 15 minutes. Dust with confectioners' sugar just before serving.
