All you need for this brown sugar bacon is two ingredients—and a little black pepper. Yes, this irresistible glazed bacon takes longer than simply frying it, but it’s well worth the 35 minutes needed. Plus most of that is hands-off time as the bacon cooks in the oven and doesn’t require any attention beyond rotating the baking sheets once. That leaves you to consider how you want to enjoy this salty-sweet meat: eaten as a snack, in a breakfast sandwich, with scrambled eggs, to garnish a bloody Mary, or on top of a frosted caramel cake or cupcake.

Why we use racks to cook the bacon: Cooking bacon on racks set over baking sheets promotes even cooking and allows the fat to drain off as it renders. Line the sheets with parchment paper for easy cleanup.

Directions

  1. Preheat oven and prep baking sheets:

    Preheat oven to 350°F. Line two 10-by-15-inch rimmed baking sheets with parchment paper; place a wire rack on top of each sheet.
