For a real taste of fall, turn to this easy sheet-pan dinner with kielbasa. It's a colorful meal that pairs the smoked pork sausage with wedges of red cabbage, sliced red onions, and halves of Gala apple. A sprinkle of caraway seeds and apple cider vinegar are the seasonings, and some wholegrain mustard is a worthy accompaniment. Add in crusty bread, rice, or boiled potatoes if you feel the need for a starch.

It takes one hour to make, but most of that time is hands off. There's just 10 minutes of prep, then the oven does the work, and you can catch up on other things while the kitchen fills with the delicious smell of roasting kielbasa and vegetables.

Directions

  1. Preheat oven; Toss cabbage and onions with oil and roast:

    Preheat oven to 400°F. Toss together cabbage, onions, oil, 3 tablespoons vinegar, and caraway seeds on a rimmed baking sheet; generously season with salt and pepper. Spread into a single layer and roast 25 minutes.

  2. Turn vegetables, add apples and kielbasa:

    Gently turn vegetables. Add apples, cut side down, and kielbasa to baking sheet, keeping everything in a single layer. Roast until cabbage is crisp-tender and apples are tender and slightly collapsed, 20 to 25 minutes.

  3. Season with vinegar, slice kielbasa and serve:

    Sprinkle with remaining 2 tablespoons vinegar. Slice kielbasa and divide equally among 4 plates with vegetables and apples. Serve with mustard
