Our cinnamon coffee cake is a crowd pleaser and the ultimate companion to your 11:00 cup of joe. If you've never made a coffee cake before, we suggest you start with this easy recipe. This simple one-layer treat doesn't have add-ins or a streusel to mix through the batter. You don't even need a mixer—you'll cut the fat into the flour mixture using two knives, a pastry blender, or your fingers. Even better, you may well have all the ingredients in your pantry; all you need are flour, shortening, eggs, milk, and cinnamon. A cinnamon crumb topping, made by adding more butter, sugar, and cinnamon to some of the dry ingredients, is the finishing touch. It's ready in under an hour, but allow time for it to cool before you enjoy a slice with your coffee.

Add chopped walnuts or pecans, fresh blueberries, or finely chopped dried fruits (such as cranberries or raisins) to the topping.

Directions

  1. Preheat oven, prep pan; combine dry ingredients:

    Preheat oven to 350°F. Grease an 8-inch square baking pan. In a medium bowl, combine flour, 3/4 cup sugar, baking powder, and salt.

  2. Cut shortening into mixture:

    Using a pastry cutter or two knives, cut in shortening until the mixture resembles coarse crumbs. Put 1/2 cup of the mixture in a small bowl, stir in remaining 2 tablespoons sugar and cinnamon, and set aside. Stir egg and milk into remaining flour mixture.

  3. Sprinkle topping and bake:

    Spoon batter into the prepared pan, and smooth the surface. Pour melted butter over the top. Sprinkle reserved crumb mixture evenly over the butter. Bake the cake until a toothpick inserted in the center comes out clean, about 35 minutes.

Storing

This cake will keep at room temperature for up to thre days or frozen for three months.
