These cheese popovers are fun to make. They rise up tall and puffy in the oven but they don't include a leavener like baking powder or soda, instead they rely on a generous amount of thoroughly whisked eggs in the batter and a preheated pan. It takes about 15 minutes to prep them, then they're transferred to the oven where a rush of steam from the batter creates the popovers’ signature shape. Serve them hot with butter and a sprinkle of salt.

The Keys to Perfectly Puffed Popovers

Preheat your pan: Place pan(s) in the oven before you begin making the batter and let it heat up as your oven warms to 350 degrees Fahrenheit. Keep in mind that they'll need a good 10 to 15 minutes in the oven to become adequately hot.

Sift your flour: Sifting the flour and salt helps to break up any clumps while also incorporating air. If you don't have a sifter, you can use a fine-mesh strainer.

Whisk well: Be sure to whisk the egg-milk mixture until it's frothy and foamy before adding the flour, then continue whisking until the mixture is quite light and fluffy. Just like sifting the flour, this will help incorporate air into the batter, which will encourage the popovers to puff up as much as possible in the oven.

When measuring flour, spoon it into your measuring cup—rather than scooping it out of the container—before leveling off the top with a knife. This will help keep the flour from packing too tightly into the cup, which can throw off the amount that makes its way into your recipe.

Make Ahead

Popovers can be made up to two hours in advance. Cool on a wire rack, then reheat in a 450-degree Fahrenheit oven just before serving.

Directions

  1. Heat oven and popover pans:

    Place a popover pan with 12 cups in the oven and preheat to 350°F.

  2. Sift flour and salt:

    Sift together flour and salt onto a piece of parchment paper; set aside.

  3. Heat milk:

    In a small saucepan, heat milk over medium heat until small bubbles form around the edges of the pan.

    Milk should be steaming but not simmering at this step. Adding too-hot milk to the eggs can risk cooking them.

  4. Make batter:

    Whisk eggs in the bowl of an electric mixer fitted with the whisk attachment on medium speed until frothy. Slowly add heated milk to eggs, whisking constantly, then increase speed to medium-high. Gradually add flour mixture and continue whisking until batter is light and fluffy.

  5. Grease heated popover pan; divide batter and cheese among cups:

    Remove heated popover pan from oven; spray each cup with nonstick cooking spray and place on a baking sheet. Fill each cup with batter so it is level to the top; top with cheese.

  6. Bake, rotating after 15 minutes:

    Bake 15 minutes. Rotate pan 180°; continue baking until golden brown, about 35 minutes more.

  7. Remove from pan and serve:

    Invert pan and remove popovers. Serve immediately.
