Our apple crumble pie recipe is a delicious cross between a fruit crisp and a flaky apple pie. It features a buttery, tender crumb topping and a just-sweet-enough filling made with tart apples, plump raisins, and plenty of warm cinnamon. We like to pair it with our go-to pie dough recipe, but if you're short on time, you can swap in a store-bought rolled crust. You’ll need a deep-dish pie plate to contain all the apples; this recipe uses 4 pounds of fruit. It's a great dessert for Thanksgiving or anytime you need a crowd-pleasing fall dessert.

How and When to Prep Apples for This Recipe

Wait to begin prepping the apples until you've fit your crust into the pie plate so they have less time to oxidize. Then, peel them and remove the cores.

To achieve thin, even slices, cut each apple in half through the stem. Next, place each apple half cut side down and use a chef's knife to make thin slices, about 1/8 inch thick. As you work, transfer them to a large bowl with lemon juice and toss occasionally to ensure the slices are evenly coated.

The Best Apples for Baking

We love the contrast of tart Granny Smith apples against the sweet crumb topping in this recipe, but you can certainly use another apple variety for this recipe. Some of our favorites for baking include Braeburn, Honeycrisp, Gala, Pink Lady, and Cortland, which all hold their shape well and won't turn to mush in the oven. For the most complex and interesting flavor, try a mix of two or even three types of apples.

3 Tips for a Perfect Pie

Chill pie crust and topping: Refrigerating both the pie crust and the crumb mixture solidifies the butter which makes for a more tender topping and flaky crust. As the firm bits of butter melt in the hot oven, the water in the butter turns to steam which leaves behind little pockets of air—and more air equals more lightness.

Handle dough gently: When making the crust and when fitting it into the pie plate, handle it as gently as possible. Avoid over-working the dough—which can make it tough—and stretching the crust, which can cause it to tear.

Pack apples in firmly: The apple slices will shrink as they bake, so it's important to pack them in as firmly as possible before folding up the edges of the crust to avoid being left with gaps.

Allow enough time for this pie to cool and set before serving, we suggest at least 6 hours.

  1. Preheat oven; make crumble topping:

    Preheat oven to 375°F. Make crumble topping: In a medium bowl, combine 1 cup flour, butter, brown sugar, and 1/4 teaspoon salt. Work with fingers until large clumps form; refrigerate until needed.

  2. Roll out dough and fit into pie plate:

    On a lightly floured piece of wax paper or parchment paper, roll dough into a 14-inch circle. Carefully fit into a 9-inch deep-dish pie plate, gently lowering dough into bottom and sides of pie plate without stretching (you will have a 2-inch overhang all around). Refrigerate.

  3. Prep apples and mix filling:

    Place lemon juice in a large bowl. Peel, core, and slice apples 1/8 inch thick, transferring them to the bowl as you work. Add granulated sugar, raisins, cinnamon, remaining 1/4 cup flour, and remaining 1/2 teaspoon salt; toss to combine.

  4. Assemble pie:

    Transfer apple mixture to pie crust, pressing in firmly. Fold dough overhang over filling, pleating it as you work your way around pie; press dough firmly against filling.

  5. Bake; add crumble topping and continue to bake:

    Bake 45 minutes, then sprinkle apple filling with crumble topping. Place pie on a baking sheet (to catch any drips) and continue to bake until golden and bubbling, 30 to 45 minutes more. Cool at least 6 hours before serving.

How to Store Apple Crumble Pie

Like other apple pies, this one can be stored on the counter—wrapped well in plastic or foil—for up to 2 days or in the refrigerator for up to 5 days.


Reheating the Pie

To rewarm pie before serving, tent it loosely with foil and place in a 325 degree Fahrenheit oven for 15 to 20 minutes, uncovering in the last few minutes to ensure the topping is nice and crisp.

What to Serve With Apple Crumble Pie

Serve this pie warm or room temperature with a dollop of freshly whipped cream or a scoop of vanilla ice cream (try our no-churn recipe to make it yourself, no machine required).
