You don't need to turn the fryer on to get sweet, spicy, and succulent chicken wings. These baked wings are just as crispy and delicious, and much easier—they don't need watching while they cook and there’s less cleanup. Plus, the mustard-marmalade glaze is a winner: It's a clever mix of Dijon and wholegrain mustard, a little cayenne for heat, and orange marmalade, that adds sweet yet tart citrus flavors. We rate them over honey-mustard wings. The sliced scallion garnish adds beautiful contrast and crunch, so don't skip it.

Directions

  1. Preheat oven; prep wings and arrange on baking sheet:

    Preheat oven to 400 degrees. Season wings with salt and pepper, toss with oil, and arrange in a single layer on a parchment‐lined rimmed baking sheet.

  2. Bake wings:

    Roast, flipping once, until golden and cooked through, about 45 minutes.

  3. Mix glaze:

    Meanwhile, whisk together marmalade, mustards, and cayenne.

  4. Brush glaze on wings and continue cooking:

    Brush wings all over with marmalade mixture; return to oven and roast until caramelized, 10 to 20 minutes. Let cool slightly, then sprinkle with scallions and serve.
