An easy dessert made with just four ingredients, there's a lot to love about these lime pudding cups. You may well have all the ingredients in your kitchen right now: heavy cream, sugar, limes, and a pinch of salt—plus more cream to whip and graham cracker crumbs for serving. They have a tart, rich flavor and the deliciously soothing texture of pudding. Yet they're easier to make than regular pudding; they're more like a posset, the English dessert that’s like a streamlined, egg-free version of pudding. Just 10 minutes of stovetop cooking and some time in the refrigerator to chill, and they're ready. Then, everyone can grab a spoon and dig into one of these cute pudding cups.

Directions

  1. Cook cream, sugar, zest, and salt:

    In a saucepan, bring heavy cream, granulated sugar, finely grated lime zest, and a pinch of kosher salt to a boil over medium heat. Cook, stirring often, until reduced to 2 cups, 8 to 10 minutes.

  2. Stir in lime juice, cool, and strain:

    Remove from heat; stir in fresh lime juice. Let cool 20 minutes, then strain through a fine mesh sieve into a liquid-measuring cup; discard solids.

  3. Divide between serving glasses and refrigerate:

    Divide evenly among 6 glasses. Refrigerate until set, about 2 hours.

  4. Serve:

    Top cups with lightly sweetened whipped cream, crumbled graham crackers, and more finely grated lime zest; serve.
