Lentils are one of the healthiest foods to eat, and as this red lentil dal recipe shows, they are also delicious. It’s an easy Indian-inspired dish where the lentils are cooked with turmeric and plenty of orange and yellow vegetables, such as carrots, golden beets, and yellow or orange bell peppers. The spiced tomato topping takes it to the next level—cherry tomatoes are quickly cooked with cumin and ginger and spooned over the lentils along with plain Greek yogurt and fresh mint. Serve with naan or other flatbreads or brown rice. It’s a nutritious meal that’s also comforting.

Directions

  1. Cook lentils with turmeric and water:

    In a large pot, combine lentils, 2 teaspoons salt, turmeric, and 8 cups water. Bring to a boil, then reduce heat to medium-low and add vegetables. Simmer, stirring often, until vegetables are tender and lentils have broken down, about 45 minutes. Season with more salt, if desired.

  2. Toast cumin seeds, add shallots and ginger and cook:

    Meanwhile, in a large skillet, heat cumin seeds in oil over medium-high until sizzling, 1 to 2 minutes. Add shallots and ginger; cook, stirring occasionally, until brown, 3 to 4 minutes.

  3. Add tomatoes and cook:

    Add tomatoes; season with salt and pepper. Cook, stirring often, until tomatoes just begin to burst, about 2 minutes more.

  4. Spoon tomatoes over lentils to serve:

    Spoon tomato mixture over lentils and serve, topped with a dollop of yogurt and mint.

Stir a splash of water into your Greek yogurt for a more spoonable texture.
