Texas sheet cake is a great party cake. It feeds a crowd and everyone will love this moist, dense, ultra-chocolatey dessert topped with a fudge-like frosting and toasted pecans. Even better, it’s easy to make. There’s no need to get the mixer out; rather than creaming the butter as you do for many cakes, all you do is melt the butter with the cocoa powder and some water. This genius technique ensures the cocoa mixes in smoothly and makes the cake as easy as an oil cake but with the delicious flavor of a butter cake. Traditionally, Texas sheet cake is frosted and served straight from the pan—to eager eaters awaiting a slice.

Directions

  1. Preheat oven and prep pan:

    Preheat oven to 375°F. Lightly butter a 9-by-13-inch cake pan. Line with parchment, leaving a 2-inch overhang on long sides.

  2. Combine dry ingredients for cake:

    In a large heatproof bowl, whisk together flour, granulated sugar, baking soda, salt, and cinnamon.

  3. Melt butter, add cocoa, and boil:

    Melt butter in a saucepan over medium-low. Whisk in cocoa, then 1 cup water. Increase heat to medium-high and bring to a boil, whisking occasionally.

  4. Add cocoa mixture to dry ingredients, then add other wet ingredients:

    Pour over flour mixture and stir to combine. Stir in eggs, buttermilk, and vanilla.

  5. Pour batter into prepared pan and bake:

    Pour batter into prepared pan; smooth top with an offset spatula. Bake until a tester inserted in center comes out clean, 22 to 24 minutes.

  6. Make the icing:

    In a small saucepan, bring butter, cocoa, and cream to a boil, stirring occasionally. Remove from heat; whisk in vanilla and confectioners' sugar. Let stand until warm before using.

  7. Cool cake and pour glaze over, sprinkle with pecans:

    Transfer cake in pan to a wire rack; let cool 15 minutes. Pour glaze over cake. Sprinkle with pecans and let cool before serving.

    For a more elegant presentation, remove cake from pan using parchment and place on a serving platter before glazing.
